Watercress salad with apple cider-garlic vinaigrette

This simple and easy-to-make watercress salad is crisp and refreshing that pairs well with many meals you desire to have.

Ingredients  

Lemon-garlic Vinaigrette

  • 4 tablespoons apple cider vinegar
  • ½ cup extra virgin olive oil
  • 1 ½ teaspoons garlic, minced
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon dijon mustard
  • ¼ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Salad

  • 2 small bunch watercress (about 10 cups loosely packed,washed and tough stem trimmed)
  • 1 large orange (remove the peel and pith, slice into round or sections)
  • ½ pound strawberries (washed, hulled and sliced to bite pieces)

Instructions

  • Make the vinaigrette: combine all the ingredients in a sealed lidded jar. Shake until all are emulsified. Dip a piece of the watercress to taste, add more seasoning if needed.

  • Place all the salad ingredients in a mixing bowl, drizzle 4 tablespoons of the vinaigrette, toss to combine, add more vinaigrette according to your taste. Enjoy!
