Lemon-garlic Vinaigrette
- 4 tablespoons apple cider vinegar
- ½ cup extra virgin olive oil
- 1 ½ teaspoons garlic, minced
- 1 tablespoon honey or maple syrup
- 1 tablespoon dijon mustard
- ¼ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
Salad
- 2 small bunch watercress (about 10 cups loosely packed,washed and tough stem trimmed)
- 1 large orange (remove the peel and pith, slice into round or sections)
- ½ pound strawberries (washed, hulled and sliced to bite pieces)
Make the vinaigrette: combine all the ingredients in a sealed lidded jar. Shake until all are emulsified. Dip a piece of the watercress to taste, add more seasoning if needed.
Place all the salad ingredients in a mixing bowl, drizzle 4 tablespoons of the vinaigrette, toss to combine, add more vinaigrette according to your taste. Enjoy!
