MORE BANANA BREAD

This banana bread is full of flavor, moist, delicious and mostly sweetened by loads of banana with a little kick of a spices.

Ingredients  

  • 1 ½ cup All-purpose flour
  • ½ teaspoon Baking powder
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • ½ teaspoon Nutmeg
  • 1 ½ teaspoon Cinnamon
  • 2 large Eggs
  • ½ cup Brown sugar
  • ½ cup Ghee, browned butter, or use vegetable oil Check the Ghee, Browned butter recipe under my BANANA-MIXED BERRIES MUFFIN WITH ALMOND STREUSEL post
  • 5 large Bananas, mashed using the back of your fork (leave some chunks, optional)
  • 1 teaspoon Vanilla extract
  • 3 tablespoon Muscovado sugar, for topping

Instructions

  • Preheat the oven to 350F and line the bottom and sides of a standard loaf pan with parchment paper leaving an inch hanging outside the pan for easy removal of the bread out of the pan when it's done.
  • In a medium bowl, combine the flour, baking powder, baking soda, salt, cinnamon and nutmeg.
  • In a large mixing bowl, place eggs, melted ghee and sugar, whisk using a large wire whisk until all the wet ingredients are fully incorporated. Add bananas and combine thoroughly. Fold in the flour mixture until there's no visible flour. Don't get tempted to over mix.
  • Transfer the batter into the prepared loaf pan, sprinkle muscovado sugar and bake for 60 minutes or until the tester comes out clean. let cool in the pan for ten minutes then remove from the pan and transfer to a wire rack to cool completely.

Notes

You can sprinkle some brown sugar / muscovado sugar as a toppings.
